✔ 500 g de ragout de pavo
✔ 1/2 cebolla cortada en trozos pequeños
✔ 1 diente de ajo pelado y laminado
✔ 200 gr de crema vegetal de almendras
✔ 2 vasos de caldo casero
✔ 6 cucharadas de aceite de oliva virgen extra
✔ 5 cucharadas de vermut blanco
✔ 1 cucharada de harina de garbanzo
✔ 1 pizca de sal
✔ 1 poco de perejil para adornar el plato
1. Pon una cazuela con el fuego a temperatura media alta, añade 4 cucharadas de aceite oliva virgen extra y rehoga la cebolla y el ajo, junto con una pizca de sal. Cuando esté dorado, retíralo y reserva.
2. En un bol echa el ragout de pavo y enharínalo con harina de garbanzo, un poco de sal y pimienta.
3. A continuación, añade una cucharada más de aceite oliva y dora la carne para que se selle.
4. Incorpora las verduras, vierte un chorro de vermut blanco y déjalo evaporar.
5. Cubre con el caldo sólo al ras la carne para que no se quede tan líquido. Ahora, déjalo hervir todo a fuego lento durante una hora, hasta que la carne quede tierna.
6. Antes de servir, templar la crema vegetal y añadir a la carne, remover para mezclar y servir.
