✔ 60 gr de queso parmesano rallado
✔ 1 diente de ajo
✔ Aceite de oliva virgen extra
✔ 2 cucharadas de miel
✔ 3 cucharadas de vinagre suave
✔ 3 cucharadas de salsa de soja
✔ 3 tomates maduros grandes o 4 medianos
✔ Sal

1. Precalienta el horno a 180º C. Cubre una bandeja de horno con papel de hornear.
2. Dispón de tres boles: uno con harina, otro con una mezcla de pan rallado, parmesano y sal, y el tercero con 3 cucharadas soperas de aceite de oliva, la ralladura y zumo de medio limón y un diente de ajo picado finamente.
3. Pasa las porciones de pavo por harina, después por el bol de mantequilla y limón y, finalmente, por el pan rallado con el parmesano.
4. Hornea las porciones de blanqueta durante 20 minutos, volteándolas a media cocción.
5. En paralelo, ralla los tomates. Calienta en un cazo un poco de aceite de oliva, añade el tomate, la miel, la salsa de soja, el vinagre y la ralladura del medio limón restante. Deja reducir durante unos minutos, y listo.
